When I received some delicious Cumberland sausages from Love Food Market, I wanted to do something a bit different with them to really enjoy the flavour. I had a little look on my go-to website for recipes, BBC Good Food, and that’s where I found this recipe…

Sticky Pan-Roasted Sausages with Grapes

Serves 4 | Prep 10mins, Cook 25mins

This dish is perfect for some light comfort food. You can have it on its own or bulk it up with some buttery light mash or polenta and veg. I made mash, steamed green beans and corn-on-the-cob for my sides. Gotta get your five-a-day, guys!

  • 1 tbsp olive oil
  • 450g good quality pork sausages – I got mine here
  • 2 onions, sliced
  • 1 garlic clove, sliced
  • 1 tsp fennel seeds
  • 100g grapes – green or red, doesn’t matter
  • 2tbsp red wine vingear

Cooking sausages

1. Put the oil in a wide frying pan, and heat over a medium heat. Then pop in your sausages and fry for 10 mins, turning every so often.

2. Add in your sliced onions, and cook for 5 minutes longer. Your onions will start to soften and the sausages will go golden brown.

3. Tip in the garlic, fennel seeds and grapes and then cook for 5 mins more. Give them a gentle stir every so often. The grapes will start to soften.

4. Pour in the vinegar and let it coat all of the other ingredients in the pan. Cook for a few more minutes until it goes ever so slightly sticky. Serve!

We really enjoyed this dish. The vinegar and grapes cut through the rich, meatness of the sausages. We really love mixing sweet and savoury tastes, so this definitely is one we’ll make again.
